I adapted this recipe from a handwritten recipe that I noted from a magazine a long time ago.
Ingredients:
- 1/2 cup unsalted butter
- 2 ounces semi-sweet chocolate, chopped
- 1/2 cup unsweetened cocoa powder
- 1 1/4 cups granulated sugar
- 1/4 teaspoon salt
- 1 egg, room temperature
- 2 teaspoons vanilla extract
- 1 tablespoon instant coffee powder
- 1/2 cup buttermilk
- 1 cup all-purpose flour
- 1/2 cup semisweet chocolate chips
For the glaze
- 4 ounces semi-sweet chocolate, chopped
- 2 tablespoons unsalted butter
- the zest of 1 orange
Instructions
- Preheat oven to 350F. Line an 8x8 pan with parchment paper or aluminum foil lightly greased
- Melt together the butter and semisweet chocolate. Remove from the heat and whisk in the cocoa, sugar, coffee, and salt
- Whisk the egg and vanilla into the buttermilk.
- Add the melted chocolate concoction to the buttermilk mixture and whisk.
- Slowly add the flour until just mixed, and then stir in the chocolate chips.
- Spread the batter into the pan and bake for 30-35 minutes or until a toothpick inserted in the center comes out clean. Cool completely.
- Once the brownies are cool, make the glaze. In 30 second increments in the microwave, melt together the semisweet chocolate and butter until smooth. Throw in orange zest and mix
- Spread on top of the brownies and let it completely set and harden before cutting and serving
