This is a zesty and spicy salad that can be had as is or piled on a crispy taco shell lined with shredded lettuce, cheese and some sour cream. A good friend of mine suggested the addition of chaat masala instead of cumin powder and chilli powder. And this small addition made quite a difference to the overall flavor!
Ingredients (serves 4-5):
Ingredients (serves 4-5):
- 1 raw mango, seeded and chopped
- 1 bell-pepper, chopped (for added color, use 1/2 red bell-pepper and 1/2 yellow bell-pepper)
- 1 cup cooked black beans
- 1 small onion, chopped
- 1 jalapeno, seeded and chopped
- 2 teaspoons chaat masala
- 1/4 cup lime juice
- zest of 1 lime
- 1 tablespoon honey
- 2 tablespoons olive oil
- 1/4 cup cilantro / coriander leaves
- Add the raw mango to a bowl, add the chaat masala and mix well.
- Add bell-pepper, black beans, onion, and jalapeno and mix
- Mix the dressing - whisk together lime juice, lime zest, honey, and olive oil.
- Pour the dressing over the salad and mix well. Garnish with cilantro
- Let the salad rest for at least 2 hours and then serve with taco, shredded lettuce and cheese.
