Raw Mango and Black Bean Salad

This is a zesty and spicy salad that can be had as is or piled on a crispy taco shell lined with shredded lettuce, cheese and some sour cream. A good friend of mine suggested the addition of chaat masala instead of cumin powder and chilli powder. And this small addition made quite a difference to the overall flavor!



Ingredients (serves 4-5):
  1. 1 raw mango, seeded and chopped
  2. 1 bell-pepper, chopped (for added color, use 1/2 red bell-pepper and 1/2 yellow bell-pepper)
  3. 1 cup cooked black beans
  4. 1 small onion, chopped
  5. 1 jalapeno, seeded and chopped
  6. 2 teaspoons chaat masala
  7. 1/4 cup lime juice
  8. zest of 1 lime
  9. 1 tablespoon honey
  10. 2 tablespoons olive oil
  11. 1/4 cup cilantro / coriander leaves
Preparation: 
  1. Add the raw mango to a bowl, add the chaat masala and mix well. 
  2. Add bell-pepper, black beans, onion, and jalapeno and mix
  3. Mix the dressing - whisk together lime juice, lime zest, honey, and olive oil.
  4. Pour the dressing over the salad and mix well. Garnish with cilantro
  5. Let the salad rest for at least 2 hours and then serve with taco, shredded lettuce and cheese.
