It's a funny name - Kosumalli :). This is nothing but simple carrot salad, the Indian way.
Ingredients (6-8 servings)
- 9-10 grated carrots
- 2-3 green chillies, finely cut (remove the seeds if you are wary of spice)
- 2 inch strip of ginger, finely cut
- 1.5 teaspoons black mustard seeds
- 1.5 teaspoons split urad dhal / thuvaram paruppu
- 1/2 teaspoon hing / asafoetida
- 1- 2 tablespoons olive oil
- 1 teaspoon salt
- 1 lemon
- 1/4 cup chopped coriander leaves / cilantro
Preparation
- Heat the olive oil. When hot, splutter mustard seeds, and then add urad dhal, green chillies, ginger, and hing and stir for a few seconds until the urad dhal begins to brown a little. Remove from heat and pour over the grated carrots. Mix well.
- Add salt, the juice of one lemon and the coriander leaves and mix well.
That's it! Serve on the side of any dish.
Hehe, I can't stop giggling over the name of this familiar dish! :) With my pathetic command of the language, of course I am reading it as mosquito-jasmine (like tiger lily, perhaps?) :)
