Everyone in the family is a fan of oranges. We will always resort to orange/citrus based treats any time of the day/year. Having tried some successful orange based loafs/pound cakes, I adapted the recipe slightly to incorporate olive oil and yogurt (instead of butter), and added a liberal cup of blackberries.
Citrus and berries go well together, so it's little surprise the baked blackberries melded so well with the orange flavor!
Ingredients:
- 1.5 cups all purpose flour
- 1 cup sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 3 eggs, at room temperature
- 1 cup yogurt
- 1/2 cup extra virgin olive oil
- 2.5 tablespoons orange zest
- 1/4 cup orange juice
- 1 teaspoon orange extract
- 1 cup blackberries
Preparation:
- Butter and flour a 9 by 5 inch loaf pan. Preheat oven to 350 F
- Mix dry ingredients together - flour, baking powder, and salt
- Whisk oil and sugar together until smooth and even
- Add eggs and whisk until combined - do not make them frothy
- Add orange zest, orange juice, and extract and mix
- Add 1/2 cup yogurt and whisk well until smooth
- Add half of the dry ingredients and mix gently with a spatula
- Add remaining 1/2 cup yogurt and whisk well
- Add the remaining dry ingredients and mix gently with a spatula
- Finally stir in the blackberries
- Transfer to prepared loaf pan and bake for 60-65 minutes or until a tester comes out clean
- Cool pan on a wire rack for 15 minutes. Then loosen the edges and invert onto a plate.
