Jam Crumb Cake

The last crumb cake I tried was quite successful and people seemed to like the contrasting textures of soft and crunchy. So, I have been trying out different flavors - one of which is this jam based cake. 

I love the flavor of mixed fruit jams - they have a unique flavor that's a medley of all the best fruits - like berries, bananas, and a hint of orange. Having wondered how a cake would taste if it took on the flavor, I finally tried it out. I really liked the cake, but I realized that not everyone is a fan of mixed fruit jam flavor. So, substitute with any jam of your liking!

Ingredients:
  1. 1.5 cups all purpose flour
  2. 1/2 stick butter, at room temperature
  3. 1/4 cup vegetable oil
  4. 3/4 cup granulated sugar
  5. 2/3 cup milk, at room temperature
  6. 2 teaspoons baking powder
  7. 2 eggs, at room temperature
  8. 1 teaspoon vanilla extract
  9. 1/2 cup mixed fruit jam
Crumb Topping:
  1.  1 cup all purpose flour
  2. 1/2 cup brown sugar
  3. 1/2 teaspoon cardamom powder (freshly powdered)
  4. 6 tablespoons melted butter


Preparation:
  1. Butter and flour a 9 inch cake pan. Preheat oven to 400 F
  2. Mix dry ingredients - flour, baking powder
  3. Cream butter until soft. Add vegetable oil, and beat the fats together until soft and smooth
  4. Add sugar and beat until creamy
  5. Add eggs and beat until mixed
  6. Add jam and vanilla extract and beat until just mixed
  7. Add half the milk and beat until mixed
  8. Add half the dry ingredients and mix gently with a spatula until mixed
  9. Add remaining milk and work into the batter with a spatula
  10. Add remaining dry ingredients and mix with a spatula. Do not over mix
  11. Transfer batter to the cake pan
  12. Prepare crumb topping:
    1. Mix flour, sugar, cardamom
    2. Add melted butter and combine until crumbs form
  13. Evenly distribute crumbs on top of the cake
  14. Bake for 30 minutes or until a tester comes out with a few moist crumbs
  15. Cool on a wire rack for 30 minutes. 
Cut the cake from within the pan and serve with coffee or as is.
