I borrowed the idea for making these parathas from a good friend of mine. It is extremely simple to prepare and tastes wonderful with a lovely hint of sweetness mingling with the spices. And the best part - the mashed sweet potatoes in the dough help make very soft parathas.

- 2.5 cups mashed, boiled sweet potatoes (peeled) (reserve the cooking liquid to knead the dough)
- 3 cups wheat flour / aata
- 1 tablespoon coriander powder
- 1 tablespoon cumin powder
- 1 teaspoon garam masala
- 2 teaspoons salt, or as needed
- 1 tablespoon olive oil
- a few teaspoons of olive oil / ghee as needed to cook the parathas
- In a wide bowl, mix together - wheat flour, salt, cumin powder, coriander powder, garam masala, and olive oil
- Add the mashed sweet potatoes and mix/knead with the flour and spices. If needed, sprinkle some water or the reserved liquid (from boiling the sweet potatoes) to bring the dough together into a soft, pliable mass.
- Heat a griddle until hot and ready to cook the parathas. Make lime-sized balls of the dough and roll out into a flat disc of 1/4-1/8 inch thickness. Sprinkle some wheat flour while rolling out the dough to avoid sticking.
- Transfer to the hot griddle and cook on both sides with a drop of olive oil / ghee
