I recently had zucchini lasagna at a restaurant and was pleasantly surprised at how well zucchini complemented the flavors of marinara and cheese. So, on a day when I had to make some quick appetizers, I worked with the ingredients on hand to put together something like mini pizza.
Ingredients (makes around 20):
- 1 zucchini, sliced into 1/4 inch slices
- 1/2 cup tomato/ marinara sauce
- 1/4 cup grated parmesan or mozzarella
- a few tablespoons of extra virgin olive oil
- salt as needed
- cracked black pepper as needed
Preparation:
- Brush some olive oil on the zucchini slices and arrange them on a baking tray.
- Bake for 5 minutes in a preheated 400 F oven. Flip the zucchinis and bake them for another 2 minutes
- Spread some tomato sauce on each zucchini slice. Sprinkle with some cheese (I used parmesan), salt (if needed; i.e., if your sauce is not salted) and black pepper.
- Put the zucchinis back in the oven and bake for 2 minutes or until the parmesan slightly melts.
Serve immediately as finger food. This is a pretty addictive appetizer that was well received.
I didn't have any basil on hand, but if you do, you could sprinkle some torn basil leaves or crushed oregano too.
