Coconut-Lime Chocolate Cake

A fun cake with tropical flavors of coconut and lime, and for extra measure, there is chocolate to round out the lovely taste! The punch of lime ties the flavors of coconut and chocolate very nicely.

Take a mini tropical vacation at home with this treat!

Ingredients:
  1. 1.75 cups of all purpose flour
  2. 1 cup sugar
  3. 2 teaspoons baking powder
  4. 1/2 teaspoon salt
  5. 2 eggs, at room temperature
  6. 1 cup coconut milk
  7. 1 stick (1/2 cup) butter, at room temperature
  8. 1 tablespoon finely grated lime zest
  9. 2 teaspoons vanilla extract
  10. 1.5 cups unsweetened grated/shredded coconut
  11. 1 cup finely coarsely shaved baking chocolate
  12. 2 tablespoons turbinado sugar
Preparation:
  1.  Preheat oven to 350 F. 
  2. Line the bottom of a 9 inch springform pan. Butter the sides and the bottom
  3. Mix all dry ingredients together - flour, baking powder, and salt
  4. Cream butter until soft. Add sugar and beat until creamy
  5. Add eggs and beat until mixed
  6. Add lime zest, vanilla extract and coconut milk and beat on low speed until mixed
  7. Stir in the dry ingredients and mix gently until just combined
  8. Stir in the chocolate and 1 cup of the grated coconut 
  9. Transfer batter into the prepared pan and spread evenly
  10. Sprinkle the remaining coconut and turbinado sugar on top of the batter
  11. Bake for 55-65 minutes until a tester comes out clean
  12. Place the pan on a wire rack and cool well - for about 45 minutes
  13. Loosen the edges by running a knife. Remove the springform attachment/sides of the pan. 
Serve as is.

Since there is coconut in the cake, take care to refrigerate and store in an air tight container.

  1. Hi, would love to try out this recipe, but I have no idea what turbinado sugar is. Could I use refined sugar in place of it? Please advise.

    1. Turbinado sugar is totally optional! You can bake without it, and if you want, you can sprinkle a little coarse-grained sugar (so it doesn't melt on top) on top of the batter before baking.
