The
last crumb cake I tried was quite successful and people seemed to like
the contrasting textures of soft and crunchy. So, I have been trying out
different flavors - one of which is this jam based cake.
I love the flavor of mixed fruit jams - they have a unique flavor that's a medley of all the best fruits - like berries, bananas, and a hint of orange. Having wondered how a cake would taste if it took on the flavor, I finally tried it out. I really liked the cake, but I realized that not everyone is a fan of mixed fruit jam flavor. So, substitute with any jam of your liking!
Adapted from a previous attempt
Ingredients:
- 1.5 cups all purpose flour
- 1/2 stick butter, at room temperature
- 1/4 cup vegetable oil
- 3/4 cup granulated sugar
- 2/3 cup milk, at room temperature
- 2 teaspoons baking powder
- 2 eggs, at room temperature
- 1 teaspoon vanilla extract
- 1/2 cup mixed fruit jam
- 1 cup all purpose flour
- 1/2 cup brown sugar
- 1/2 teaspoon cardamom powder (freshly powdered)
- 6 tablespoons melted butter
Preparation:
- Butter and flour a 9 inch cake pan. Preheat oven to 400 F
- Mix dry ingredients - flour, baking powder
- Cream butter until soft. Add vegetable oil, and beat the fats together until soft and smooth
- Add sugar and beat until creamy
- Add eggs and beat until mixed
- Add jam and vanilla extract and beat until just mixed
- Add half the milk and beat until mixed
- Add half the dry ingredients and mix gently with a spatula until mixed
- Add remaining milk and work into the batter with a spatula
- Add remaining dry ingredients and mix with a spatula. Do not over mix
- Transfer batter to the cake pan
- Prepare crumb topping:
- Mix flour, sugar, cardamom
- Add melted butter and combine until crumbs form
- Evenly distribute crumbs on top of the cake
- Bake for 30 minutes or until a tester comes out with a few moist crumbs
- Cool on a wire rack for 30 minutes.
