Chocolate & Walnut Cookies

It's been so long since I baked, I was literally dreaming about it. So, I set out to rectify it this weekend. After taking stock of my sparse pantry, I decided to make these simple cookies.

This is a mildly sweet cookie with bites of walnut and just enough chocolate to satisfy your craving. 



Ingredients (33 cookies):
  1. 1 1/3 sticks of unsalted butter, at room temperature
  2. 1 cup of sugar (1/2 brown sugar, and 1/2 regular sugar)
  3. 1/4 cup + 1 tablespoon unsweetened cocoa powder
  4. 2 teaspoons vanilla extract
  5. 1 tablespoon yogurt
  6. 1 tablespoon milk
  7. 1/3 cup roughly chopped walnuts
  8. 2 cups all-purpose flour
Preparation:
  1. Cream together the butter and sugar until fluffy
  2. Add yogurt and milk and mix
  3. Add cocoa powder and vanilla extract and mix evenly
  4. Slowly mix in all-purpose flour in 1 cup increments until just mixed. Do not over mix.
  5. Finally gently mix in the walnuts
  6. Preheat oven to 350 F. If the dough is too stick refrigerate for 10-15 minutes. Roll the dough into small balls and place on a greased baking sheet 1.5 inches apart. The cookies just barely spread out. Gently press a piece of walnut on top of each cookie
  7. Bake for 12 minutes or until bottom is browned
  8. Remove and cool for 5 minutes. Then transfer to a cooling rack and let the cookies completely cool.

Enjoy with tea or coffee!
