It's been so long since I baked, I was literally dreaming about it. So, I set out to rectify it this weekend. After taking stock of my sparse pantry, I decided to make these simple cookies.
This is a mildly sweet cookie with bites of walnut and just enough chocolate to satisfy your craving.

This is a mildly sweet cookie with bites of walnut and just enough chocolate to satisfy your craving.
Ingredients (33 cookies):
- 1 1/3 sticks of unsalted butter, at room temperature
- 1 cup of sugar (1/2 brown sugar, and 1/2 regular sugar)
- 1/4 cup + 1 tablespoon unsweetened cocoa powder
- 2 teaspoons vanilla extract
- 1 tablespoon yogurt
- 1 tablespoon milk
- 1/3 cup roughly chopped walnuts
- 2 cups all-purpose flour
- Cream together the butter and sugar until fluffy
- Add yogurt and milk and mix
- Add cocoa powder and vanilla extract and mix evenly
- Slowly mix in all-purpose flour in 1 cup increments until just mixed. Do not over mix.
- Finally gently mix in the walnuts
- Preheat oven to 350 F. If the dough is too stick refrigerate for 10-15 minutes. Roll the dough into small balls and place on a greased baking sheet 1.5 inches apart. The cookies just barely spread out. Gently press a piece of walnut on top of each cookie
- Bake for 12 minutes or until bottom is browned
- Remove and cool for 5 minutes. Then transfer to a cooling rack and let the cookies completely cool.
Enjoy with tea or coffee!
